The traditional ‘Gazpacho Andaluz’ is almost perfect so we’ve changed very little. We reduce the salt slightly, give the tomato skins a reprieve – until they meet the blender, and adjust the water/bread ratio to get a fairly thick texture.

Gazpacho is a delicious summer soup that originated in Southern Spain. It's vegetarian (v) vegan (ve) full of vitamins, minerals and fibre and always served cold. It is important that all ingredients are fresh but essential that the tomatoes are particularly fresh and juicy. Large 'on the vine' varieties are best. Check allergy advice on all ingredients. Instructions
  1. Prepare the tomatoes by removing the cores and seeds. Cut the bread into cubes. Add both to a bowl with the water and olive oil. If possible strain the discarded tomato cores and seeds to retrieve and add some of the juice.
  2. Peel the cucumber, de-seed and chop the green pepper, peel the onion and garlic. Add to a blender or food processor and blend to a paste.
  3. Add the water, tomatoes, bread and olive oil and blend on a high setting. You may see a few specs of tomato peel after blending. If you wish to remove these use a more powerful blender on a high setting.

Modifications

You may wish to increase the salt to taste and a pinch of ground black pepper can also be added

The tomatoes can be peeled to remove all traces of skin if desired

You can adjust the thickness of the soup by adjusting the bread/water ratio

The soup is often garnished with chopped cucumber and/or tomato and/or sliced pepper

Small glasses of Gazpacho can be used as a tapas dish
